It serves multiple roles, acting as an alarm pheromone, a nematicide (used to combat plant-parasitic nematodes), and a mutagen. 2-Decenal (dec-2-enal) is an organic compound with the chemical formula C10H18O. It presents as a pair of isomers, namely, (2E)-2-decenal and (2Z)-2-decenal. In its normal state, it's a clear, oily liquid that may appear yellow due to impurities. This substance has a potent, waxy odor and is found in trace amounts in animal food. It's also a component of the essential oil of coriander and is utilized as a flavoring agent.This compound is present in a wide range of foods, including bitter orange peel, blackberry, ginger, butter, mushrooms, kiwi, bacon fat, roast beef, beef fat, heated beef fat, bilberries, carrot root, boiled chicken, chicken broth, cranberry press residue, ham, lingonberry, orange, heated pork fat, potato chips, soybeans, boiled mutton, tea, roasted hazelnuts, French fries, tomato, wheat bread, roasted pecans, rice, roasted peanuts, and coriander leaf. In the case of coriander leaf, the presence of this aldehyde, alongside (E)-2-dodecenal, has been linked to the aversion some individuals experience due to a specific gene variant, OR6A2. 2-Decenal is also found as an additive in cigarettes and contributes to the unpleasant odor emitted by the brown marmorated stink bug (Halyomorpha halys). Apart from its diverse applications, 2-Decenal can be used as a nematicide for plant protection and is known to have mutagenic properties. Furthermore, it plays a biological role as an alarm pheromone, which is released by an organism when it's under threat, serving as a warning signal to other individuals in the vicinity.
